REDIHOP
Purpose Provision of light-stable bitterness
Composition Potasium salt of Rho-iso-alpha-acids 30% w/v in aqueous alkaline solution. Redihop is produced by borohydride reduction of iso-alpha-acids derived from the extraction of hops with carbon dioxide.
Use In light-stable beers of moderate to strong bitterness, Redihop complements Tetrahop Gold in providing a rounded bitterness without creating an excessively stable foam. For light-stable beers packaged in clear or green glass bottles, all the bitterness must be derived from Redihop and/or Tetrahop Gold. Redihop may be added, without prior dilution, to the kettle or directly to beer either before or after conditioning but before the final filtration and, preferably, by metered injection into the beer stream during transfer Local high concentrations of rho-iso-alpha-acids should be avoided and the addition point should be well separated from that of any other additives.
Packaging Normally in high density polythene containers of 20 or 25 litres.
Storage Store in full, closed containers at 15° to 25°C. It is normal for crystals of rho-iso-alpha-acids to separate during storage. These crystals may be redissolved by warming the product to 50°C and mixing.
